About this drink
A cappuccino is a third espresso, a third steamed milk and a third foam. It is not a latte with extra bubbles, and it is not a 16oz drink, whatever the drive-through down the road tells you.
We warm the cup first — a cold ceramic cup drops a 6oz drink by nearly ten degrees before it reaches the table — and we texture the milk to a stiffer foam than we would for a flat white, so it holds its shape to the last mouthful.
